Sinigang na baboy is a popular Filipino sour soup made with pork and a variety of vegetables. Here’s a basic recipe for Sinigang na Baboy:
Ingredients:
1 lb pork ribs or pork belly, cut into serving pieces
1 medium-sized onion, quartered
2 medium-sized tomatoes, quartered
2-3 pieces long green chili peppers (siling pansigang)
1 medium-sized radish, peeled and sliced
1 medium-sized eggplant, sliced
1 bundle string beans (sitaw), cut into 2-inch pieces
1 bunch water spinach (kangkong) or spinach, leaves separated from stems
1 packet (40g) sinigang mix (you can use tamarind-based mix or fresh tamarind if available)
8 cups water
Fish sauce (patis) or salt, to taste
Instructions:
Boil the Pork: In a large pot, bring the water to a boil. Add the pork ribs or pork belly pieces. Let it boil for about 10 minutes or until the meat turns white and scum starts to form on the surface. Skim off the scum using a ladle.
Add Vegetables: Add the onions and tomatoes. Simmer for 5 minutes.
Prepare the Tamarind Broth: If using sinigang mix, dissolve it in a cup of water and strain to remove any undissolved bits. If using fresh tamarind, place the tamarind in a bowl with hot water and extract the juice. Strain and discard the solids.
Season the Soup: Pour the tamarind broth into the pot. Season with fish sauce or salt to taste. Bring to a boil.
Add Radish and Eggplant: Add the radish slices and eggplant slices. Simmer for about 5-7 minutes or until they start to soften.
Add Long Green Chili Peppers: Add the long green chili peppers. Simmer for another 2 minutes.
Add String Beans (Sitaw) and Water Spinach (Kangkong): Add the string beans (sitaw) and water spinach (kangkong) leaves. Simmer for an additional 2 minutes or until the vegetables are tender but still crisp.
Adjust Seasoning: Taste the sinigang soup and adjust seasoning with more fish sauce or salt, if needed.
Serve: Serve hot with steamed rice. Enjoy your Sinigang na Baboy!
Notes:
You can adjust the amount of tamarind mix or fresh tamarind according to your preferred sourness level.
Some variations include adding other vegetables like taro (gabi) or okra.
Sinigang can also be made with shrimp (sinigang na hipon) or fish (sinigang na isda) instead of pork.
